Skills of cooking cheap cuts such as lamb shanks, shoulder, beef cheeks chuck steak etc, pork neck (pulled pork) are not only cheap but very rewarding

Lank shanks are pretty pricey these days though, especially relative to the effort you need to put into them.

Pricier than when they were sold as dog bones, but still cheap. And they are now meatier and can be "frenched"

Why would I bother 'frenching' anything? My kitchen isn't a restaurant. :D

Probably just thinking of the good old days.
