Cut lamb rack into 2 points each, roast for 15mins. Take out and cool.
Then paint the meat with Dijon mustard.
In a bowl have tandaco stuffing, mix with crushed garlic, Parmesan cheese and olive oil. Take then stuffing mix (fat breadcrumbs basically) and press into the racks so it sticks to the mustard.
Back in the oven til the crumbs are lightly browned, 10-15mins max.
You’ll have had spuds roasting while all that’s been going on.
