I had a lot to do with grain back in the heady days of my youth, with casual work in the wool & wheat district mostly revolving around the industry. I learnt some interesting things about the QA on what goes into cereal, for instance!
Also still have scars from run-ins with some very unforgiving steel constructions out in the middle of nowhere. Hmm just checked, one scar seems to have finally disappeared.
From memory, we checked for 3 main criteria when a truckload of wheat showed up - moisture content, weight and foreign objects. Can barely make out the machinery used (though the foreign objects one was definitely a kind of sieve).
For a couple of summers I worked a number of days in one of these ovens.
