Just got back from overseas family vacay!! Very fun time, highly recommend the foot bath at Hakone Open Air Museum followed by a bit of Picasso (2nd floor gets a bit NSFW though, be warned!)

Ultimate feel-good music for me is black music. Soul, disco, funk, jazz, house, all that adjacent stuff. Something about all that positivity and hope pouring outta the ghetto. Spirited kind of stuff. A few faves off the top of my head:











Last track is as close to perfection as you'll hear I think.
 
Dry age do have a Wagyu brisket option which I haven’t tried. Also, I haven’t tried the beef ribs there but my mate has cooked them a number of times and reckon they’re awesome. Is he post a pallet smoker and offset smoker to cook them and says they’re great.

He say mate does write paddock the table. Might have to check out the one in Hoppers.
Waghu brisket is more forgiving when smoking

But if you have a nor.al brisket going well then there is no need in spending the extra cash imo

Chose Freddie to listen to first up. I’m a Jazz fan (without being an expert, but right on the money). I’ll listen to the rest of the suggestions by a number of people now.

My happy playlist is really taking off! Some Toump recommendations of Jazz tracks, Dory_77 second album in particular but enjoyed both, plus random cheesy shit that I still like such as Penguin Cafe Orchestra.

This is already going to be wild if I choose shuffle

What is your pasta recipe please?
I usually make enough for two.

Depends a bit on what sauce I’m putting on the pasta whether or not I use flour and semolina, but mostly I go with just flour since it has a nice silky feel when cooked.

So I use 150 grams of typo 00 flour and one large egg. I do the making a well thing and knead for at least 10 minutes to get the gluten thing happening. By the end of that I have arms like a wrestler.

The laminated pasta I roll out thin in a machine, plonk some herbs like parsley and sage on one half, fold the other half, then feed it through the pasta machine for a few more rolls. Once the sheets are thin, the herbs flatten and look like little fossils. The pasta I made last night was parsley and edible flower petals.
