Gee, the perfect egg has been soooooo, close but I still need a little more time. It’s not all about 60/60 there’s a heap of variables that come into play, things like, the type of egg, the size of the egg, the age of the egg. The result needs to be a silky white with a perfectly runny yolk. I fully understand the perfect egg will be subjective “BUT” I’m prepared to go on as long as this shit fred keeps going. It’s all in Dans hands.

Can’t stand those coddled eggs myself but have done them in a few restaurants and do understand the finesse that goes into it.
