I guess when you realise it's created by the same people that created British cuisine it makes a fair bit of sense

Blame the 12th century Brits (such as Chipmunk) who decided to split the verb "willan" (which meant to wish or will) into two forms: "wil" for the present tense and "wold" for the past tense.

"wil" then evolved further, to "wool" to "wel" to "woll" (typical British indecisiveness), before finally coming to a consensus in the 16th century when "woll" became "will", and "wold" became our "would" .

"Won't" is a legacy from when the verb was "woll", as it is short for "woll not".
