Why does Gerard Whateley sound so weird when he says "so"?

I honestly can't get my head around it. Have a listen to the bloke try and pronounce "so".

I think it kind of sounds like he says "sho".... especially when he gets passionate about the subject he is dribbling/preaching on about.

I am hoping someone on bigfooty.com has studied linguistics and explain to me why I find it so infuriating.
