I find it really hard to find quality dramas that don’t involve regular violence or killing… just looking for some suggestions.

At the moment any time we go for something non-violent it tends to be some flavour of sitcom, it would be nice to have some meatier options

Actually Suits is another one. Think there’s plenty out there.
Suits is fun but pretty lightweight

Stuff like Mad Men and the West Wing is more along the lines of what I’m thinking

So much critically acclaimed drama is violent, and whilst I don’t have a specific problem with that I feel like I’ve overdosed on rape and killing recently

Yeah fair enough.

So some of the one's I've seen that might fit your description:

Dr Death
House of Cards
Ballers
Gotham (maybe slight violence but certainly not much from memory)

I'm sure there's others that escape me.
 
I like Nordic noir but I would hardly describe them as non-violent

I mean, the opening scene of The Bridge has the bodies of two people who’ve been cut in half

Does remind me though - Borgen is great for this topic

I'm sure there's others that escape me.

House of Cards (I assumed you meant the US Netflix version) especially in later seasons don't shy away from the killings (even if it's not graphic).

If you want to go an unconventional route Caesar, Korean dramas tend to complete abhor from anything graphic or adult and there are a few universally acclaimed ones out there.

well yeah, one murder that the whole show revolves around

I dunno, I just feel like the vast majority of really good non-comedic shows seem to rely on violence or the threat of violence as a key and ongoing plot device - as an inciting incident, a means of setting stakes or maintaining tension, an action set-piece climax, whatever. And that's fine - I don't have any particular objection to violence in shows per se - it's just that sometimes a bit of variety is nice

recently we've gone through The Americans, We Own This City and a couple of seasons of Fargo - the murder fatigue is real and I'm starting to have dreams about putting people through a meat grinder

Interesting how it's easier to think of violent shows but there's still plenty of good content.

Hear me out. The Staircase is based on a death (or a murder...) and there are a few death scenes (that are flucking amazing but brutal), however 98% of the movie is about the drama that unfolds before and after it.
